[Music] for John Walker. Johnny Walker, Thomas [Music] [Music] Well, welcome to to warehouse 2. This is one of the 28 warehouses we have at the distillery and it’s actually got three levels. We’re in level one. There’s a level above and then a level above that. So, like a child in a candy store. Yes. This is where we mature tamboo single malt. This is this is what Tom do about now. This is the heart of cherry matured whiskey. H we only ever mature in all the rosa season casks. All our whiskies are only ever natural color. That’s something I’m exceptionally proud of. Um you will see when we sample some casks, the variation in the color of the whiskey coming from the different types of casks. As I said before, we only work with three bedas in in Spain. As I like I said before, we’ve got some tamboo here in maturing in American oak casks which I think where we’ll go to first and then we’ll maybe have some some European and then we’ll maybe explore something that’s you know really really dark from be hogs head I’ve got this a secret hog head. Um and then we something a bit older. Okay. So you’re here to do some work. Yes. You’re not here just to have an easy day out. I expect you to do some work today, Leo. Yes. I need to open some casks. There is no such thing as free lunch. Yes. So, you need to do some work. That should do. Quite quickly. Cool. So, quite sharp. Quick. Quick. Again. No. Quick. No. Pull. Pull. Okay. We have a 2007 American oak butt. First of all, we turn 2007 task 3189. So, what we’re at uh seven from 25 18 years old. Okay. Need you to do this part, too. And your thumb over it. And then just hold your thumb and lift up. Okay. And let it go. Wow. Oh, that’s yours. Oh, thank you. Okay. Let it let it warm. Warm it a little cuz we’re in a warehouse. It’ll be about 8° 9° in here. Let it come up to temperature. Get it a we bit heat into here. This is American oak. This is American oak. But first fill, we can see the lovely golden color there. I mean, that’s all coming from the the cask. All that color is coming from the wood itself. It’s not too dark. It’s just this lovely golden color. Get it up to temperature. Last time I had this, there was pineapple. It was trop. It was tropical. Yeah. I imagined I was lying on beach. Mhm. Yeah. Yeah. Yeah. Yeah. Yeah. Coconut, pineapple, and banana. There’s ripe banana is what I got from this last time out. This has got some vanilla, so some soft notes there. We’re still getting some of that fruiness from the distillery. And this will still be somewhere about 62% 63 64%. Would have been filled at 68 1.5%. Okay. Okay. So, it’s still going to be high alcohol, but I want you to have a we sip of it. Cheers. Of course. You got to say cheers. Cheers. Cheers. You did the work. [Music] This is whiskey you can have 8:00 in the morning, 10:00 in the morning, 12:00 lunchtime, 3:00 in the afternoon, 8:00 at night, and 10:00 all day. This is an all day whiskey. Yes. This This is in Scotland, we would call this a session whiskey. It’s very easy to drink. It’s It’s soft. It’s got flavor. It’s got depth to it. It’s got finish to it. Very very easy drinking whiskey. A little This a vanilla. I I love the vanilla. And this is American oak. People make the mistake that they think that sherry matured whiskey is only about sherry bombs. Yeah. Particularly in Taiwan, particularly in Asia, um in Scandinavia, they always think sherry matured, you know, like hit the back of the head. Sherry, cherry, sherry, deep color, rich. Um it doesn’t need to be that. Um this is still cherry mature and only ever been in a cherry c. So it’s important to to differentiate between the two this time around. We’re 2003 is too much. Let’s let’s bring it up to temperature a we bit. You know, not not massive difference in terms of color. You you’ll see something next door that you’ll go, “Wow.” But it is darker, less gold. But this is more ruby. This is more golden. I would have said just comparing the two just now into butterscotch caramel. Chocolate orange. More more sherry. A bit of um orange marmalade. A little coffee. But look at look at the oiliness of it in your glass. Look at the oiliness around around your glass for a start. Again, we still probably about 60% here. Very slow. Toffee dates. Yeah, it’s very balanced and very perfect. This this is a bit more complex, a we bit deeper in terms of the flavors to it. A bit more wholesome um a bit more later on in the evening. This isn’t a whiskey I could drink all day. The job that our blenders then do for tamboo 12, 15, 18 is mix these in different ratios to give us the different flavor profiles of each of these. It’s not too dry. It’s not too tanning there if you want to add a be spott to any of them at all. Tamu. Tamu. You can drink meat. This is the difference. So, you saw it at the safe. You’re drinking at 71%. You’re now drinking at 62%. And again, you don’t get throat burn. 62%. You know what? It doesn’t need water. It’s so [Music] smooth. Amazing. Yeah. Let’s go. I’ve got some I’ve got a couple of another things I want to to let you try, but we can’t film how we got it. One year there was a group from Taiwan and there was maybe 15 16 people and we’re having dinner. The first time I’d had dinner formal dinner with people from Taiwan and I was introduced to each person on the table. This is this is Leo. Leo’s from Taiwan and you are my flower. Hello everybody. Yeah, it’s fantastic having you here at Tamboo with us. How about we start? We start with a tamboo 12-year-old. The tamboo 12. Tamboo 12 is all natural color like all tambdos and it is all exclusively sherry matured. This is so typical of uh spaceide whiskey. As I say, from beginning to end, matured in sherry casks, allaroso. Okay. It’s 43% alcohol. So it’s it’s still got a hit of and it’s got body to it. It has got got a we bit of alcohol presence there. It’s not too light in the alcohol stakes. This is predominantly a mix of more American oak and a little European oak from first casks and some refill casks in there as well. But this is a very light whiskey. It’s a great introduction. It’s got it’s got notes of pears and and vanilla. Spicy. Yes. It’s a fruity. Yeah. Have a have a we taste of it. Very soft. Very well balanced. Yeah. Very balanced. Yeah. But it has mouth feel. It has presence. I finish there as [Music] well. This is a whiskey that can be drunk at any time of the day. It’s very, very light. It’s very soft. It’s very mellow. It’s a great introduction to shared whisies. Um, people that perhaps even say, “I don’t like sherry maturation.” This is a great whiskey to introduce them to. And even people that say, “I’m more used to borbin rather than scotch whiskey.” Again, this is a great place to take them. [Music] I had a a colleague here at Tamboo years ago. I do not like sherry matured whiskey and all of a sudden you give him a tamboo 12 and wow sherry mature. Well, yeah, I like that. Cuz it’s not it isn’t into the sherry bomb category. It’s not in that that deep complex hard-hitting, you know, top end. Basically, this is still excellent quality whiskey, but it’s very very light. [Music] Yes. It’s it’s it’s a whiskey to to enjoy and just, you know, this this is a whiskey we would describe in Scotland. What we would do is with this, you will drink the whole bottle in a night. You throw that away and you would just like that. This will be a whiskey we can drink all night long. No problem at all. We’ve enjoyed our whiskey. We’ve we’ve had laughter. We’ve had smiles. We’ve had fun. Easy. Just a moment. Yeah. Too 15. This is now us into 46%. So, a bit more alcohol there. Still natural color, still only matured in cherry casks, only all the roso. But what we’ve got here now, and we can we can even start to see with these bottles that are in front of us, the variation that’s coming in in color, the the different colors going from this, you know, this amber through a bit more golden and then through a bit more ruby color in terms of the 18 and 21. The 15 is a whiskey that has grown in me. This is a whiskey that initially um personally I thought, okay, but this is a whiskey that I’ve started drinking a lot more of now because I’m beginning to to understand the depth and quality of this whiskey. So, we’re into now a bit more um a bit more butterscotch is the way I would describe it. This is this is starting for me. This is me starting to to turn this into carnival, into funfair. Uh, pa po. Definitely a wee bit of paper. That’s what I’m getting. Very sweet. Sweet. Yes. This is we’ve we’ve still got the presence of the American oak there that’s giving it that we bit more vanilla and the soft sweetness. But what we’ve started to introduce here now is more firstfell and also more first European oak. So, it’s starting to get a we bit more complex, starting to get to get that, you know what, there’s it’s a bit creamier in the mouth feel. And when you when you hit the 18-year-old, you know, it just bounces around your mouth. This isn’t a longer finish. Um, and I just get, you know, a bit more presence. Chocolate cake is very good. Yeah. I’m finish. Okay. Yeah. But, you just warm. This is something exceptional. Tamu 21-year-old. This is something we’ve been waiting for for well for 21 years. Um and we’ve been waiting for that 3 years since Tamu 18 was released. We’ve been we’ve been just eyeing up and and looking at casks over that time. And our team of blenders and myself have been very much aware that Tamu 18 was an exceptional whiskey. We need to make Tambu 21 even better. So, it wasn’t easy, but I’m delighted with what we have done because what we’ve got here now is this exceptional Tamu 21-year-old for you. Okay. This is the first time you’ve tasted this, isn’t it? Yes. Yes. Our first time. Yeah. I mean, look at the color. The color again. Natural color. Very beautiful. Color. Natural color as always. I mean that is one thing I’m exceptionally proud of is tamboo is only ever natural color and only ever matured in sherry casks 47.5% strength. Okay. So we’ve just gone up ever so slightly. Cheers. No already fruity berries. Yes. I’m going to say I’m getting a hint of raspberries. very very com comfortable. It’s is very soft. It is again it’s so pleasant just to to nose this whiskey. Um it’s a very balanced fruity fruity. Yes. You you it’s really sultanas and and raisins. Yes. You know, pump juicy raisin. It’s very amazing. It’s so good. My head. It is down to good casks. So, it’s exceptional spirit from the distillery, but good quality casks. And if you’ve got good quality casks and that good quality fruity spirit and that olar roso there that’s in the casks, you’re going to get exceptional whiskey. And you know this this is testament to it. Um we’ve had to wait. We’ve had to be patient but it’s worth the wait. 21 21 years a long time but it’s well worth it. Well worth it. And you know this is this is a whiskey you want to enjoy with friends. Okay. Yeah. Cheers. Yeah. Cheers. Very very interesting. Okay, good. Bye-bye. [Music]
